Baseball is an interesting. The rules seem to change based on situations.

With less than 2 outs, there's a man on 1st. The batter hits the ball. They take the force out at 2nd and the batter reaches safely. This is scored a "fielder's choice". My understanding is this does not effect the batter's batting average. It is considered an "plate appearance" but not an "at bat".

What if there are two outs? Is it still a fielder's choice?

I'm not sure about the batting average part, but if there are two outs, the force out at second ends the inning, making it a moot point.

It's not a moot point because the quesiton is about the batting average.

It's scored as a fielder's choice. FC just means the player had a legitimate chance to get either the batter or the base runner coming from 1st, and chose to go for the less easy out (since the batter is usually a little slower to get moving than a runner leading off a base).
